rice or thin Asian noodles
To prepare
Boil chicken with 2 teaspoons of salt until tender. Save broth. When cool, cut or tear chicken into bite-sized pieces.
Thinly slice one green onion, including the stem, for each person.
Cut or pull off two sprigs of cilantro for each person.
Thinly slice the cabbage.
Prepare rice/Asian noodles as directed on package, using serving suggestions.
Place in each bowl: 2 tablespoons cabbage, 1 green onion, 2 sprigs cilantro, ½ cup of chicken pieces, cooked rice/noodles, and 1 tablespoon fish/soy sauce.
Cover with hot chicken broth. Add pepper to taste.
