- 1 ½ cups (about ½ ) dried apricots
- 4 cups water
- 1 cup of sugar
- Put the apricots in a bowl with the water. Soak overnight.
- Transfer soaked apricots and any remaining water to a saucepan. Add the sugar.
- Cover and simmer over low heat 15 minutes or until apricots are tender.
- Serve at room temperature or chilled.
