Breakfast Porridge

Preparation Time: 30 minutes | Serves: 8

Ingredients

  • 2 ⅔ cups of couscous
  • 2 ⅔ cup of water
  • ½ cup sugar
  • ¼ cup vegetable oil
  • 1½ cups mixed nuts, chopped (walnuts, almonds, hazelnuts, pistachios, pine nuts)
  • 8 ounces of pitted dates
  • 2 cups of milk
  • additional sugar

To prepare

  1. Place water, ½ cup sugar, and oil in heavy large saucepan. Bring to boil, stirring to dissolve sugar.

  2. Place couscous in large bowl. Pour sugar mixture over couscous and stir until well blended. Cover and let stand 10 minutes.

  3. While couscous stands, chop the dates. Heat 2 cups of milk in the microwave (60-90 seconds) or in a saucepan over medium-low heat. Do not allow the milk to burn.

  4. After 10 minutes, fluff couscous with a fork to separate grains. Add nuts and dates to the couscous and mix.

  5. Serve in bowls. Stir in warm milk and add more sugar, if desired.
