Beet Salad

Central Asia

Preparation Time: 60 minutes | Serves: 8


  • 6 large beets
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 2 teaspoons balsamic vinegar
  • 1 cup sour cream
  • Fresh dill garnish (optional)

To prepare

  1. Rinse and trim beets. Place in boiling water about 30-40 minutes until knife tender.
  2. Place beets in cold water. When cool enough to handle, peel off the beet skin or rub off with a soft cloth or paper towel (This will stain the cloth).
  3. Slice beets in half. Then cut each half in ¼-inch slices.
  4. Toss the beets with sugar, salt, and balsamic vinegar.
  5. Gently stir in the sour cream and refrigerate.
  6. Sprinkle beets with fresh dill.
