Millet Mush

Preparation Time: 25 minutes | Serves: 6-8

Ingredients

  • 2 cups uncooked rice (instant or slow cooking)
  • 4 cups of water
  • 6 tablespoons butter or margarine
  • 2 tablespoons flour
  • 2 teaspoons salt
  • ¼ teaspoon pepper
  • 2 cups milk
  • green food coloring

To prepare

  1. In a large saucepan, bring the water to a boil. Add rice and simmer for 18-20 minutes with the lid on.
  2. Stir and add more water to make the rice mushy and sticky.
  3. When the rice is completely cooked, you may want to mash it up with a spoon, a potato masher, or an electric mixer.
  4. While the rice cooks, make the sauce. Melt the margarine in a saucepan over low heat.
  5. Blend in the flour, salt, and pepper.
  6. Add the milk slowly, stirring the mixture constantly until it thickens and bubbles.
  7. Remove the sauce from the heat. Let it cool a bit. Stir in a few drops of green food coloring to resemble the green sauce, made from edible leaves, that the Fulani eat.
  8. Divide the rice into two serving bowls and pour the sauce over it.
  9. Use your hands and eat directly from the common serving bowls like the Fulani people do.
