Vegetable Pakora

Vegetable Fritters

Preparation Time: 30 minutes | Serves: 4-6

Ingredients

  • 1/2 pound vegetables (cauliflower, broccoli, potatoes, onions, green peppers, etc.)
  • 1 cup whole wheat flour
  • 1/4 teaspoon salt (or to taste)
  • 1/2 teaspoon cayenne pepper
  • 1/8 teaspoon mint extract
  • vegetable oil
  • tomato sauce, ketchup, or mint chutney

To prepare

  1. Peel, slice, and partially boil the vegetables in a 3-quart saucepan.
  2. Mix the flour, salt, pepper, and mint with enough water to make a thin batter.
  3. Dip each vegetable piece in the batter, coating it thoroughly.
  4. Heat oil in a deep frying pan. Deep fry each coated vegetable piece in the hot oil until golden brown.
  5. Carefully remove each “fritter” with a slotted metal spoon and drain on paper towels.
  6. Serve warm with tomato sauce, ketchup, mint chutney, or your favorite “dipping sauce.”
