Pho Ga

Chicken Soup with Rice/Noodles

Southeast Asia

Preparation Time: 75 minutes | Serves: 6-8

Ingredients

  • 2 pounds chicken
  • 2 teaspoons salt
  • ½ head of cabbage
  • 6-8 green onions
  • 1 bunch cilantro
  • fish sauce or soy sauce (Asian sectionof grocery store)
  • pepper to taste
  • rice or thin Asian noodles

To prepare

  1. Boil chicken with 2 teaspoons of salt until tender. Save broth. When cool, cut or tear chicken into bite-sized pieces.
  2. Thinly slice one green onion, including the stem, for each person.
  3. Cut or pull off two sprigs of cilantro for each person.
  4. Thinly slice the cabbage.
  5. Prepare rice/Asian noodles as directed on package, using serving suggestions.
  6. Place in each bowl: 2 tablespoons cabbage, 1 green onion, 2 sprigs cilantro, ½ cup of chicken pieces, cooked rice/noodles, and 1 tablespoon fish/soy sauce.
  7. Cover with hot chicken broth. Add pepper to taste.
  8. Eat with chopsticks or large spoons.
